Dijon Garlic Grilled Shrimp

For tonight's dinner I decided on such a nice summer day it was time to BBQ. :) I had seen a simple recipe for a shrimp glaze that I had been wanting to try. So I picked up some frozen raw jumbo shrimp from Wal Mart (I hate Wal Mart but it is definitely the place to buy frozen shrimp its 2 to 3 dollars cheaper in price) and decided to give it a go, because bbqing is not just for guys to do its pretty easy for anyone to pick up on. Plus Shrimp is very low in calories and fat! Making it a great choice of meat to BBQ!


Ingredients:
6 Jumbo Raw Shrimp (I buy the tail on frozen raw shrimp, its grey when raw)
3 Tablespoons of Dijon Mustard
2 Tablespoons of Honey
4 Tablespoons of lemon juice
2 Garlic cloves minced (I used the minced in the jar garlic you can use fresh garlic too)
7 pieces of cut yellow onion about an inch by an inch pieces (yellow is less strong then red, i find it more pleasant to eat)
1 cup of cooked brown rice (I use half of the rice in a boil in a bag by Success)
1 either metal or wooden kabob spears

Preparation
1. Defrost shrimp in water
2. Then, I start cooking the rice so its ready when I'm done grilling the shrimp
2. Cut onion in 1 inch by 1 inch pieces
3. Mix Dijon, honey, garlic, & lemon juice together
4. Then take your spear and alternate between onion and shrimp (taking the tails off the shrimp makes it easier)
5. Spread the mixture on the shrimp. (you will have extra, do not throw it away)
6. Go out to the grill with the shrimp and extra mixture and make sure to let it heat up and clean the part you will be using (if you don't have a brush to clean it, use crumbled up foil and clean it) if you don't have a grill you can try cooking it on the stove it might turn out similar.
7.  Grill 3-4 minutes on each side or until pink, while its grilling pour more of the mixture on the shrimp on each side. (leave a little extra for your rice)
8. Pour extra mixture on rice and enjoy :)

Meal is  around 400 calories all together

Mushroom, Tomato, & Basil Frittata & Simple Raspberries Chocolate Dessert

Sounds Fancy Right? It's actually very similar to an omelet. I love this recipe because it is so easy and doesn't take much time to make! Great for busy days! So how do you make mushroom,tomato, & basil frittata? Its simple let me show you!

Ingredients:
1/2 medium onion, minced (I almost always use yellow onions because there less strong so they don't overpower dishes)
3 medium cloves garlic minced (you can buy it fresh and chop it yourself or buy minced garlic it tells you measurements comparsion to cloves on the jar)
1 Tablespoon +1 Tablespoon chicken broth (chicken broth is the best to saute food its so low in calories only 10 calories per cup!)
1 cup thinly sliced mushrooms (the recipe calls for crimini but use what you like I use baby Bella most of the time)
1/2 medium tomato (or handful of grape tomatoes cut in half I use these cause I like to also eat grape tomatoes as a snack)
3 large eggs beaten
3 Tablespoons chopped fresh basil
salt and black pepper to taste

1. Chop up onions, garlic,mushrooms, tomatoes, & basil
2. On Medium heat in a medium saucepan add tablespoon of chicken broth and onions and cook while stirring for 3 minutes.
3. Add Mushroom and garlic for additional 2 minutes stir occassionally
4. Add another tablespoon of chicken broth and tomatoes and basil a little salt and pepper and let cook for 1 minute
5. Then turn down to low heat and pour over evenly beaten eggs, cover Sauscepan with a lid and cook 5 to 8 minutes or until firm. (I have an electric stove so it takes around 8 minutes gas stoves usually are stronger and usually only need the shorter side of time)
Calories around 300 Says it serves two and one serving is 150 calories, for dinner I eat 2 servings

Simple Raspberries Chocolate Dessert

Want to add some fruit to your diet and still get your chocolate fix? Ok well I do! Cause I'm a Chocoholic and love my sweets!

Ingredients:
8 Fresh Raspberries
2 Tablespoons (approximately) Hershey's Genuine Chocolate Syrup (do not get flavored syrup get real chocolate syrup because flavored tastes nasty)

So Raspberries have this perfect hole to fill with chocolate syrup adds enough chocolate to give it flavor without having to use a lot of chocolate! So just fill up the top with chocolate syrup!

2 Tablespoons of Hershey's Chocolate Syrup is 100 calories & Raspberries are around 1 calorie each your looking at 110 calorie dessert! Plus you got the benefit of Raspberries which Raspberries possess almost 50% higher antioxidant activity than strawberries, three times that of kiwis, and ten times the antioxidant activity of tomatoes. So enjoy your healthy dessert!

Garlic and Herb Oven Fried Halibut with Brown Rice

Hi Everyone this is my first Post! I will be going through what I had for dinner tonight.
So I hate fish, really the only way I like it is if it doesn't taste like fish. I'm always determined to find fish recipes I like because fish is wonderful for you! It's low in fat and calories and has great variety of important nutrients and for this recipe you will be using Halibut which has the minerals selenium, magnesium, phosphorus and potassium; the B vitamins B12, niacin, and B6; and perhaps most important, the beneficial omega-3 essential fatty acids. Great thing about Halibut it doesn't taste fishy at all! My guide to eating seafood in college is look out for sales! Fresh fish is expensive, but they put it on sale a few days before it needs to be frozen, so check the date on sale fish and make sure you will be able to eat it before it goes bad! So here I'll go through what you will need for this meal!


Ingredients for Main Dish:
1/4 cup of panko Japanese bread crumbs (better for you then regular bread crumbs, cheap too like $1.50 for a box)
2 Tablespoons of Fresh Basil (good to invest in a basil plant or find out what grocery stores carry it cheap)
1 Tablespoon of Fresh Parsley (should be about $0.50 for a whole bundle)
1/4 cup of chopped yellow onions (or you can use 1/2 teaspoon of onion powder)
1 Garlic clove minced
1 Egg beaten
3 Tablespoons of All Purpose Flour
6 ounces of Halibut Fillets
1/2 Tablespoon of Olive Oil
Pam Cooking Spray

Side:
Brown Rice (I buy Success Boil in a Bag boils for 10 minutes makes 2 servings a bag)
Green Onions chopped
Carrots chopped
Lemon Juice
Garlic Spices (anything works I just love using garlic to season)


To Prepare Main Dish:

1.Preheat Oven to 450 Degrees
2.Cut up onion, garlic, basil, parsley
3.Cut off skin on halibut unless you want to keep it on I prefer to cut it off
4. Put onion, garlic, basil, parsley and panko in a bowl, flour in another separate bowl, and beaten egg (add salt and pepper) in another separate bowl.
5. Dip Halibut in Flour, then egg, then panko mixture (save left over panko mixture)
6. Put Halibut in a Pam sprayed skillet pan with the olive oil and cook on medium heat 2.5 minutes on each side or till golden brown.
7. Put Halibut on Pam Sprayed broiler pan add on top any extra panko mixture you didn't use.
8. Let it bake in the oven 6-8 minutes and test with a fork to see if its at your desired doneness
Serving size:1 Calories around 300

To Prepare Side Dish:
1.After Boiling Rice put 1 cup of rice in a Pan Sprayed skilled
2. Cook on medium low heat for only a few minutes and add carrots, green onions, some lemon juice, and spices (I use garlic pepper)
Calories: Around 185 for 1 Cup
