Dijon Garlic Grilled Shrimp

For tonight's dinner I decided on such a nice summer day it was time to BBQ. :) I had seen a simple recipe for a shrimp glaze that I had been wanting to try. So I picked up some frozen raw jumbo shrimp from Wal Mart (I hate Wal Mart but it is definitely the place to buy frozen shrimp its 2 to 3 dollars cheaper in price) and decided to give it a go, because bbqing is not just for guys to do its pretty easy for anyone to pick up on. Plus Shrimp is very low in calories and fat! Making it a great choice of meat to BBQ!


Ingredients:
6 Jumbo Raw Shrimp (I buy the tail on frozen raw shrimp, its grey when raw)
3 Tablespoons of Dijon Mustard
2 Tablespoons of Honey
4 Tablespoons of lemon juice
2 Garlic cloves minced (I used the minced in the jar garlic you can use fresh garlic too)
7 pieces of cut yellow onion about an inch by an inch pieces (yellow is less strong then red, i find it more pleasant to eat)
1 cup of cooked brown rice (I use half of the rice in a boil in a bag by Success)
1 either metal or wooden kabob spears

Preparation
1. Defrost shrimp in water
2. Then, I start cooking the rice so its ready when I'm done grilling the shrimp
2. Cut onion in 1 inch by 1 inch pieces
3. Mix Dijon, honey, garlic, & lemon juice together
4. Then take your spear and alternate between onion and shrimp (taking the tails off the shrimp makes it easier)
5. Spread the mixture on the shrimp. (you will have extra, do not throw it away)
6. Go out to the grill with the shrimp and extra mixture and make sure to let it heat up and clean the part you will be using (if you don't have a brush to clean it, use crumbled up foil and clean it) if you don't have a grill you can try cooking it on the stove it might turn out similar.
7.  Grill 3-4 minutes on each side or until pink, while its grilling pour more of the mixture on the shrimp on each side. (leave a little extra for your rice)
8. Pour extra mixture on rice and enjoy :)

Meal is  around 400 calories all together
